Can I delete the email address field in my survey?

No, you cannot delete the Email field in the contact information question. The Site Surveys contact information question lets you use fields to gather information about respondents and relate that information to a contact record. The Email field is required to associate each respondent's contact information with their survey response(s) and contact record.
